Sweet and Spicy Corn and Zucchini Fritters
Serves 3 – 390 Calories Per Serving – 13g fat/60g carbs/10g protein
Ingredients
- 2 T Olive Oil
- 1 T Flax Seed
- 3 T Water
- 1 Can Sweet Corn
- 1 Zucchini
- 1 Tsp Baking Powder
- 1/2 Cup Brown Rice Flour
- 2 Scoops Pea Protein
- 1/2 Tsp Pepper
- 1/2 Cup Thai Sweet Chili Sauce
- Sea Salt as Needed
Instructions
- Grind the flax seeds and mix with water and set aside
- Add corn to blender with pepper, salt, and baking powder and mix until smooth
- Add into a mixing bowl and mix with pea protein, brown rice flour, and flax seed mixture
- Dice zucchini and add into batter
- Add olive oil to a large skillet over medium high heat and spoon in nine cakes, flipping once golden
- Serve with sweet chili sauce
