Comfort Food: Pumpkin and Sweet Potato Gnocchi

Serves 4 – 290 Calories Per Serving – 13g Fat/37g Carbs/6g Protein



  • 1 Sweet Potato
  • 1 Can Pumpkin Puree
  • 1 Tsp Paprika
  • 1/2 Tsp Pepper
  • 1 Tsp Garlic Powder
  • 1 Cup Oat Flour
  • 1 Egg
  • 2 Tsp Fresh Sage
  • 2 T Olive Oil
  • 1/2 Cup Reserved Gnocchi Water
  • 1/4 Cup Unsweetened Almond Milk
  • 1/2 Cup Vegan Parmesan Cheese
  • Sea Salt as Needed



  • Microwave sweet potato until soft and remove skin
  • Bring a large pot of water to a boil
  • Add sweet potato into a large bowl with the pumpkin puree, paprika, garlic powder, pepper, and salt and mix well
  • Push the puree to the side and place flour and egg in the middle and and mix in slowly until it becomes a dough
  • Begin rolling out the dough into half inch circumference logs and cut into inch long pieces
  • Start boiling the gnocchi in batches and scoop them out once they float up to the top
  • In a large skillet, mix together olive oil, sage, gnocchi water, almond milk, parmesan cheese, and salt
  • Add the gnocchi to the skillet and coat in the parmesan sauce, simmering until sauce thickens
