Comfort Food: Pumpkin and Sweet Potato Gnocchi
Serves 4 – 290 Calories Per Serving – 13g Fat/37g Carbs/6g Protein
Ingredients
- 1 Sweet Potato
- 1 Can Pumpkin Puree
- 1 Tsp Paprika
- 1/2 Tsp Pepper
- 1 Tsp Garlic Powder
- 1 Cup Oat Flour
- 1 Egg
- 2 Tsp Fresh Sage
- 2 T Olive Oil
- 1/2 Cup Reserved Gnocchi Water
- 1/4 Cup Unsweetened Almond Milk
- 1/2 Cup Vegan Parmesan Cheese
- Sea Salt as Needed
Instructions
- Microwave sweet potato until soft and remove skin
- Bring a large pot of water to a boil
- Add sweet potato into a large bowl with the pumpkin puree, paprika, garlic powder, pepper, and salt and mix well
- Push the puree to the side and place flour and egg in the middle and and mix in slowly until it becomes a dough
- Begin rolling out the dough into half inch circumference logs and cut into inch long pieces
- Start boiling the gnocchi in batches and scoop them out once they float up to the top
- In a large skillet, mix together olive oil, sage, gnocchi water, almond milk, parmesan cheese, and salt
- Add the gnocchi to the skillet and coat in the parmesan sauce, simmering until sauce thickens
