Super Duper Strawberry Waffles
Serves 4 – 450 Calories Per Serving – 12g Fat/80g Carbs/11g Protein
Ingredients
- 10oz Frozen Strawberries
- 2 T Xylitol
- 1/4 Cup Orange Juice
- 1 Tsp Vanilla Extract
- 2 Cups Unsweetened Almond Milk
- 1 Tsp Apple Cider Vinegar
- 1 Cup Cornmeal
- 2 Cups Oat Flour
- 2 T Xylitol
- 1 T Baking Powder
- 1/2 Tsp Salt
- 1 Tsp Cinnamon
- 2 T Olive Oil
- Olive Oil Spray
Instructions
- Pre-heat waffle iron and spray with olive oil spray for each waffle
- In a small sauce pan, add strawberries, xylitol, orange juice, and vanilla extract and let cook over medium heat until it breaks down into a sauce
- Mix together the milk and vinegar into a small container and set aside
- In a large bowl, whisk together cornmeal, oat flour, xylitol, baking powder, and salt
- Make a crater in the center and add milk and oil, whisking until smooth, letting sit for five minutes to thicken
- Split into four and cook batter in the waffle iron
- When finished, top with strawberry sauce
