Tofu Scramble Toastadas

Serves 3 – 400 Calories Per Serving – 16g Fat/45g Carbs/22g Protein

 

Ingredients

  • 1 Head Broccoli
  • 1 Red Bell Pepper
  • 1 Sweet Onion
  • 1 Carrot
  • 1 Jalapeno
  • 1 Tsp Garlic Powder
  • 1 Tsp Cumin
  • 1 Tsp Chili Powder
  • 1 Tsp Oregano
  • 1 T Olive Oil
  • 1 Container Tofu
  • 1 T Liquid Aminos
  • 1 Lime
  • 2 T Nutritional Yeast
  • 1 T Franks Hot Sauce
  • 3 Brown Rice Tortillas
  • Sea Salt as Needed

 

Instructions

  • Preheat oven to 400 and line baking sheet with parchment paper
  • Place tortillas on baking sheet and spray with olive oil, baking for eight minutes or until golden brown
  • Dice broccoli, pepper, onion, and jalapeno and add to a large skillet with olive oil, sautéing until tender
  • Push vegetables to the side of the skillet and crumble tofu in the middle
  • Season everything with garlic, cumin, chili, oregano, nutritional yeast and liquid amigos
  • Place veggies and tofu on top of tortillas and top with hot sauce and lime juice
