Tofu Scramble Toastadas
Serves 3 – 400 Calories Per Serving – 16g Fat/45g Carbs/22g Protein
Ingredients
- 1 Head Broccoli
- 1 Red Bell Pepper
- 1 Sweet Onion
- 1 Carrot
- 1 Jalapeno
- 1 Tsp Garlic Powder
- 1 Tsp Cumin
- 1 Tsp Chili Powder
- 1 Tsp Oregano
- 1 T Olive Oil
- 1 Container Tofu
- 1 T Liquid Aminos
- 1 Lime
- 2 T Nutritional Yeast
- 1 T Franks Hot Sauce
- 3 Brown Rice Tortillas
- Sea Salt as Needed
Instructions
- Preheat oven to 400 and line baking sheet with parchment paper
- Place tortillas on baking sheet and spray with olive oil, baking for eight minutes or until golden brown
- Dice broccoli, pepper, onion, and jalapeno and add to a large skillet with olive oil, sautéing until tender
- Push vegetables to the side of the skillet and crumble tofu in the middle
- Season everything with garlic, cumin, chili, oregano, nutritional yeast and liquid amigos
- Place veggies and tofu on top of tortillas and top with hot sauce and lime juice
