Lickity Split Pea Lettuce Wraps
Serves 4 – 340 Calories Per Serving – 5g Fat/57g Carbs/18g Protein
Ingredients
- 1 1/2 Cup Split Yellow Peas
- 2 T Liquid Aminos
- 1 T Rice Vinegar
- 2 Tsp Sriracha
- 1 T Xylitol Maple Syrup
- 1 T Olive Oil
- 1/2 Sweet Onion
- 1 Tsp Ginger
- 1 Tsp Garlic Powder
- 4 Green Onions
- 1 Carrot
- 1 Head Butterhead Lettuce
Instructions
- Place peas in a medium pot, cover with twice the water, and boil for twelve minutes or until tender
- Mix together liquid aminos, rice vinegar, sriracha, maple syrup, ginger, and garlic in a small container
- Dice onion and green onion and place in a small skillet with olive oil, sautéing until tender
- Using a vegetable peeler make carrot ribbons
- Once peas are done, add into the onion skillet with the carrots and add in sauce, letting it simmer for five minutes
- Place pea mixture in the butterhead lettuce leaves to serve
