Baked Falafel and Tzatziki Bowl

Serves 3 – 260 Calories Per Serving – 11g fat/29g carbs/10g protein

Ingredients

  • 1 Can Chickpeas
  • 1/2 Sweet Onion
  • 1 Tsp Garlic Powder
  • 1 Tsp Baking Soda
  • 1 Tsp Cumin
  • 1/2 Tsp Pepper
  • 1 Tsp Parsley
  • 1/2 Lemon
  • 3/4 Cup Plain Almond Yogurt
  • 1 Tsp Dill
  • 1 Head Butter Lettuce
  • 1/2 Cup Cherry Tomatoes
  • 1 Avocado
  • 1/2 Cucumber
  • Sea Salt as Needed

 

Instructions

  • Pre-heat oven to 400 and place parchment paper on baking sheet
  • In a food processor, add chickpeas, onion, garlic powder, baking soda, cumin, pepper, salt and parsley, pulsing until paste forms
  • Form into nine one-inch patties, place on baking sheet, and bake for 30 minutes
  • Mix together yogurt, lemon juice, dill, and salt
  • Dice tomato, avocado, and cucumber
  • Build your bowl, starting with lettuce, then falafel, then veggies, and top with tzatziki
