Baked Falafel and Tzatziki Bowl
Serves 3 – 260 Calories Per Serving – 11g fat/29g carbs/10g protein
Ingredients
- 1 Can Chickpeas
- 1/2 Sweet Onion
- 1 Tsp Garlic Powder
- 1 Tsp Baking Soda
- 1 Tsp Cumin
- 1/2 Tsp Pepper
- 1 Tsp Parsley
- 1/2 Lemon
- 3/4 Cup Plain Almond Yogurt
- 1 Tsp Dill
- 1 Head Butter Lettuce
- 1/2 Cup Cherry Tomatoes
- 1 Avocado
- 1/2 Cucumber
- Sea Salt as Needed
Instructions
- Pre-heat oven to 400 and place parchment paper on baking sheet
- In a food processor, add chickpeas, onion, garlic powder, baking soda, cumin, pepper, salt and parsley, pulsing until paste forms
- Form into nine one-inch patties, place on baking sheet, and bake for 30 minutes
- Mix together yogurt, lemon juice, dill, and salt
- Dice tomato, avocado, and cucumber
- Build your bowl, starting with lettuce, then falafel, then veggies, and top with tzatziki
