Kale-licious Tofu Scramble
Serves 2 – 440 Calories Per Serving – 27g fat/24g carbs/29g protein
Ingredients
- 1 T Olive Oil
- 1/2 Sweet Onion
- 1/2 Red Bell Pepper
- 1 Tsp Garlic Powder
- 14oz Firm Tofu
- 1/2 Bunch Kale
- 1 Tsp Cumin
- 1 Tsp Chili Powder
- 1 Tsp Paprika
- 1/2 Tsp Pepper
- 1/2 Tsp Red Pepper Flake
- 2 T Nutritional Yeast
- 1 Avocado
- Sea Salt as Needed
Instructions
- Dice onion, pepper, and kale, and add to a large skillet with half of olive oil, salt, and garlic powder, cooking until tender
- Move veggies to edge of the pan and add other half of olive oil in the middle
- Crumble in tofu, seasoning with cumin, chili powder, paprika, pepper, red pepper flake, and salt
- Let it brown for a minute before stirring into veggies, and then add in nutritional yeast
- Slice up avocado and serve with scramble
