Kale-licious Tofu Scramble

Kale-licious Tofu Scramble

Serves 2 – 440 Calories Per Serving – 27g fat/24g carbs/29g protein

 

Ingredients

  • 1 T Olive Oil
  • 1/2 Sweet Onion
  • 1/2 Red Bell Pepper
  • 1 Tsp Garlic Powder
  • 14oz Firm Tofu
  • 1/2 Bunch Kale
  • 1 Tsp Cumin
  • 1 Tsp Chili Powder
  • 1 Tsp Paprika
  • 1/2 Tsp Pepper
  • 1/2 Tsp Red Pepper Flake
  • 2 T Nutritional Yeast
  • 1 Avocado
  • Sea Salt as Needed

 

Instructions

  • Dice onion, pepper, and kale, and add to a large skillet with half of olive oil, salt, and garlic powder, cooking until tender
  • Move veggies to edge of the pan and add other half of olive oil in the middle
  • Crumble in tofu, seasoning with cumin, chili powder, paprika, pepper, red pepper flake, and salt
  • Let it brown for a minute before stirring into veggies, and then add in nutritional yeast
  • Slice up avocado and serve with scramble
