A Bit Cheesy, A Bit Spicy, Hummus Bites
Serves 2 – 480 Calories Per Serving – 32g fat/31g carbs/17g protein
Ingredients
- Olive Oil Spray
- 1 Can Chickpeas
- 1 T Olive Oil
- 1 Tsp Cumin
- 1 Tsp Paprika
- 1 Tsp Garlic Powder
- 1 Container Lemon Hummus
- 1/2 Cup Vegan Cheddar Cheese
- 1 Egg
- Sea Salt as Needed
Instructions
- Pre-heat oven to 400 degrees and line baking sheet with parchment paper
- Rinse chickpeas and place them in a bowl with olive oil and seasonings, stirring to mix
- Place on baking sheet and bake for 30 minutes, stirring halfway
- Once crispy, place chickpeas in a food processor and mix until bread crumb consistency
- In the same bowl, mix together chickpea crumbs, hummus, cheese, and egg
- Form into twelve balls and place on parchment paper, spray with olive oil, and bake for 15 minutes
