Triple B – Buddha Breakfast Bowl

Serves 4 – 500 Calories Per Serving – 18g fat/67g carbs/23g protein

 

Ingredients

  • 1 T Olive Oil
  • 1 1/2 Cup Brown Rice
  • 1 Package Tempeh Bacon
  • 4 Green Onions
  • 1 Tsp Cumin
  • 1 Tsp Pepper
  • 1 Tsp Garlic Powder
  • 1 Bunch Kale
  • 1 Cup Cherry Tomatoes
  • 4 Eggs
  • 1 Avocado
  • Sea Salt as Needed

 

Instructions

  • Cook rice according to instructions in a rice cooker
  • Chop bacon and kale into small pieces and halve tomatoes and place in a large skillet with olive oil, seasonings, and salt, sautéing until tender.
  • In a small skillet, cook eggs sunny side up and season with salt
  • Cut up avocado and green onions and build the bowl, starting with rice, then kale mixture, then egg, and finally avocado and green onion
