Triple B – Buddha Breakfast Bowl
Serves 4 – 500 Calories Per Serving – 18g fat/67g carbs/23g protein
Ingredients
- 1 T Olive Oil
- 1 1/2 Cup Brown Rice
- 1 Package Tempeh Bacon
- 4 Green Onions
- 1 Tsp Cumin
- 1 Tsp Pepper
- 1 Tsp Garlic Powder
- 1 Bunch Kale
- 1 Cup Cherry Tomatoes
- 4 Eggs
- 1 Avocado
- Sea Salt as Needed
Instructions
- Cook rice according to instructions in a rice cooker
- Chop bacon and kale into small pieces and halve tomatoes and place in a large skillet with olive oil, seasonings, and salt, sautéing until tender.
- In a small skillet, cook eggs sunny side up and season with salt
- Cut up avocado and green onions and build the bowl, starting with rice, then kale mixture, then egg, and finally avocado and green onion
