Feel Good Pumpkin and Thyme Pasta

Serves 3 – 520 Calories Per Serving – 10g fat/95g carbs/14g protein



  • 1 T Olive Oil
  • 1 Sweet Onion
  • 1 Zucchini
  • 1 Tsp Garlic Powder
  • 1 Can Pumpkin Puree
  • 2 T Nutritional Yeast
  • 1 1/2 Cup Unsweetened Almond Milk
  • 1 Tsp Thyme
  • 1 Package Brown Rice Pasta
  • Sea Salt as Needed



  • In a large saucepan, heat water to a boil and cook pasta according to directions
  • Dice onion and zucchini and place in large skillet with olive oil, cooking under tender over medium heat
  • Stir in pumpkin puree, milk, nutritional yeast, and seasonings, letting simmer for five minutes
  • Stir noodles into sauce and serve
