Feel Good Pumpkin and Thyme Pasta
Serves 3 – 520 Calories Per Serving – 10g fat/95g carbs/14g protein
Ingredients
- 1 T Olive Oil
- 1 Sweet Onion
- 1 Zucchini
- 1 Tsp Garlic Powder
- 1 Can Pumpkin Puree
- 2 T Nutritional Yeast
- 1 1/2 Cup Unsweetened Almond Milk
- 1 Tsp Thyme
- 1 Package Brown Rice Pasta
- Sea Salt as Needed
Instructions
- In a large saucepan, heat water to a boil and cook pasta according to directions
- Dice onion and zucchini and place in large skillet with olive oil, cooking under tender over medium heat
- Stir in pumpkin puree, milk, nutritional yeast, and seasonings, letting simmer for five minutes
- Stir noodles into sauce and serve
