Asparagus and Onion Sweet Potato Toasts

Serves 4 – 310 Calories Per Serving – 12g fat/44g carbs/11g protein



  • 1 Can Cannellini Beans
  • 1 Avocado
  • 1 T Tahini
  • 1 1/2 T Olive Oil
  • 1/4 Cup Almond Yogurt
  • 1/2 Lemon
  • 1/4 Cup Fresh Basil
  • 1/2 Tsp Pepper
  • 2 Sweet Potatoes
  • 1 Bundle Asparagus
  • 1/2 Sweet Onion
  • 1 Tsp Garlic Powder
  • Sea Salt as Needed



  • Pre-heat oven to 350 and place parchment paper on baking sheet
  • Slice sweet potato into thin toasts, dice onion, and cut asparagus in half
  • Lay out potatoes, asparagus, and onion on baking sheet and drizzle with half of the olive oil, season with salt and garlic powder, and bake for 20 minutes
  • Add beans, avocado, tahini, half of olive oil, yogurt, lemon juice, basil, salt, and pepper into a blender and mix until smooth
  • Top sweet potato toasts with sauce and then top with onion and asparagus
