Asparagus and Onion Sweet Potato Toasts
Serves 4 – 310 Calories Per Serving – 12g fat/44g carbs/11g protein
Ingredients
- 1 Can Cannellini Beans
- 1 Avocado
- 1 T Tahini
- 1 1/2 T Olive Oil
- 1/4 Cup Almond Yogurt
- 1/2 Lemon
- 1/4 Cup Fresh Basil
- 1/2 Tsp Pepper
- 2 Sweet Potatoes
- 1 Bundle Asparagus
- 1/2 Sweet Onion
- 1 Tsp Garlic Powder
- Sea Salt as Needed
Instructions
- Pre-heat oven to 350 and place parchment paper on baking sheet
- Slice sweet potato into thin toasts, dice onion, and cut asparagus in half
- Lay out potatoes, asparagus, and onion on baking sheet and drizzle with half of the olive oil, season with salt and garlic powder, and bake for 20 minutes
- Add beans, avocado, tahini, half of olive oil, yogurt, lemon juice, basil, salt, and pepper into a blender and mix until smooth
- Top sweet potato toasts with sauce and then top with onion and asparagus
