Get In My Mouth – Veggie Hummus Flatbread
Serves 2 – 470 Calories Per Serving – 23g Fat/55g Carbs/12g Protein
Ingredients
- 1/2 Cup Brown Rice Flour
- 1/2 Cup Tapioca Flour
- 1 Egg
- 1/4 Cup Water
- 1 1/2 T Olive Oil
- 1/2 Tsp Baking Powder
- 1 Tsp Garlic Powder
- 1/4 Cup Vegan Mozzarella Cheese
- 1 Head Broccoli
- 1/2 Sweet Onion
- 6 T Hummus
- Sea Salt as Needed
Instructions
- Pre-heat oven to 350 and place parchment paper on baking sheet
- Mix together both flours, water, egg, half of olive oil, baking powder, garlic powder and salt into a dough
- Roll dough onto baking sheet and bake for ten minutes
- Chop broccoli and onion into small pieces
- Top dough with hummus, mozzarella, broccoli and onion, and drizzle half of olive oil over top with salt, and bake for 12 minutes
