One Skillet Tofu Chilaquiles

Serves 3 – 430 Calories Per Serving – 20g fat/44g carbs/22g protein

Ingredients

  • Olive Oil Spray
  • 3 Brown Rice Tortillas
  • 1 Package Tofu
  • 1 Tsp Garlic Powder
  • 1/4 Cup Nutritional Yeast
  • 1 T Olive Oil
  • 1/2 Sweet Onion
  • 1 Orange Bell Pepper
  • 1 Jalapeno
  • 1/4 Cup Vegetable Broth
  • 1 Avocado
  • Sea Salt as Needed

 

Instructions

  • Pre-heat oven to 400 and place parchment paper on baking sheet
  • Cut tortillas into chips, place on baking sheet, spray with olive oil, and season with salt, baking for 10 minutes
  • Mince onion, pepper, and jalapeno
  • In a cast iron skillet, add half the olive oil and sauté vegetables over medium heat until tender
  • Push vegetables to the edges and add other half of olive oil and crumble tofu into the skillet, seasoning with salt, garlic, and nutritional yeast
  • Once browned, add in vegetable broth and tortillas chips and let simmer for five minutes
  • Top with sliced avocado and salsa
