One Skillet Tofu Chilaquiles
Serves 3 – 430 Calories Per Serving – 20g fat/44g carbs/22g protein
Ingredients
- Olive Oil Spray
- 3 Brown Rice Tortillas
- 1 Package Tofu
- 1 Tsp Garlic Powder
- 1/4 Cup Nutritional Yeast
- 1 T Olive Oil
- 1/2 Sweet Onion
- 1 Orange Bell Pepper
- 1 Jalapeno
- 1/4 Cup Vegetable Broth
- 1 Avocado
- Sea Salt as Needed
Instructions
- Pre-heat oven to 400 and place parchment paper on baking sheet
- Cut tortillas into chips, place on baking sheet, spray with olive oil, and season with salt, baking for 10 minutes
- Mince onion, pepper, and jalapeno
- In a cast iron skillet, add half the olive oil and sauté vegetables over medium heat until tender
- Push vegetables to the edges and add other half of olive oil and crumble tofu into the skillet, seasoning with salt, garlic, and nutritional yeast
- Once browned, add in vegetable broth and tortillas chips and let simmer for five minutes
- Top with sliced avocado and salsa
