Thugggggg Burger and Onion Rings
Serves 4 – 500 Calories Per Serving – 7g fat/89g carbs/22g protein
Ingredients
- Olive Oil Spray
- 1 T Olive Oil
- 1 Sweet Onion
- 1 Sweet Potato
- 1 Cup Brown Rice
- 2 Scoops Pea Protein
- 1 Can Black Beans
- 1/4 Cup Chickpea Crumbs
- 1/4 Cup Chickpea Flour
- 1 Tsp Garlic Powder
- 1 Tsp Paprika
- 1 Tsp Cumin
- 1 Tsp Onion Powder
- 1/2 Tsp Cayenne Pepper
- 1/4 Cup Oat Flour
- 1/4 Cup Almond Milk
- 1/4 cup Tapioca Flour
- 2 T Nutritional Yeast
- 1 Tsp Paprika
- 1 Tsp Cayenne Pepper
- 1 Cup Cherry Tomatoes
- 1 Head Butter Lettuce
- Sea Salt as Needed
Instructions
- Cook rice in a rice cooker according to package instructions
- Pre-heat oven to 425 and line baking sheet with parchment paper
- In a sealable container, mix together tapioca flour, almond milk, and salt
- In another sealable container, mix together oat flour, nutritional yeast, paprika, cayenne, and salt
- Slice onion into sixteen rings and set the rest aside
- Place all the rings in the wet container and shake until coated, then do the same with the dry, and then spread onto baking sheet to bake for 20 minutes
- Dice the rest of the onion and sweet potato and cook in a large skillet with olive oil until tender
- Add into blender with brown rice, black beans, garlic powder, paprika, cumin, onion powder, and cayenne and blend until smooth
- Pour mixture into a large bowl and add in pea protein, chickpea crumbs, and chickpea flour and mix until smooth and form into eight patties
- Spray skillet with olive oil and cook patties on both sides for three minutes
- Serves with butter lettuce and cherry tomatoes
