Veggie and Tofu Fried Rice
Serves 4 – 360 Calories Per Serving – 9g fat/57g carbs/18g protein
Ingredients
- 1 T Olive Oil
- 1 Sweet Potato
- 1/2 Sweet Onion
- 1 Carrot
- 1 Tsp Garlic Powder
- 1 Tsp Ginger
- 1 Tsp Cinnamon
- 1/2 Tsp Pepper
- 2 T Liquid Aminos
- 1 T Rice Wine Vinegar
- 1 Tsp Sriracha
- 1 Cup Brown Rice
- 3 Cups Spinach
- 3 Green Onions
- 1 Cup Peas
Instructions
- Cook brown rice in a rice cooker according to package instructions
- Dice sweet potato, onion and carrot and place in a large skillet with olive oil, cooking until tender
- Add in peas, spinach, and spices, cooking until spinach is wilted
- Mix together liquid aminos, vinegar, and sriracha and add into skillet with brown rice and chopped green onion, folding everything together
