Veggie and Tofu Fried Rice

Serves 4 – 360 Calories Per Serving – 9g fat/57g carbs/18g protein

 

Ingredients

  • 1 T Olive Oil
  • 1 Sweet Potato
  • 1/2 Sweet Onion
  • 1 Carrot
  • 1 Tsp Garlic Powder
  • 1 Tsp Ginger
  • 1 Tsp Cinnamon
  • 1/2 Tsp Pepper
  • 2 T Liquid Aminos
  • 1 T Rice Wine Vinegar
  • 1 Tsp Sriracha
  • 1 Cup Brown Rice
  • 3 Cups Spinach
  • 3 Green Onions
  • 1 Cup Peas

 

Instructions

  • Cook brown rice in a rice cooker according to package instructions
  • Dice sweet potato, onion and carrot and place in a large skillet with olive oil, cooking until tender
  • Add in peas, spinach, and spices, cooking until spinach is wilted
  • Mix together liquid aminos, vinegar, and sriracha and add into skillet with brown rice and chopped green onion, folding everything together
