Baba Ganoush Na’anwich

Serves 3 – 340 Calories Per Serving – 15g fat/42g carbs/11g protein

 

Ingredients

  • 1 Eggplant
  • 2 Tsp Olive Oil
  • 1 Shallot
  • 1/2 Red Bell Pepper
  • 1 Zucchini
  • 1/2 Tsp Pepper
  • 1/4 Cup Tahini
  • 1 Lemon
  • 1 Tsp Garlic Powder
  • 2 T Water
  • 1 Cup Chickpea Flour
  • 1 Cup Tapioca Flour
  • 1 T Olive Oil
  • 2 Tsp Apple Cider Vinegar
  • 1 Tsp Baking Powder
  • 1/2 Cup Unsweetened Almond Milk
  • 1 Tsp Basil
  • 1 Tsp Oregano
  • 1 Tsp Parsley
  • 1 Tsp Thyme
  • Sea Salt as Needed

 

Instructions

  • Pre-heat oven to 400 and place parchment paper on baking sheet
  • Dice shallot, red pepper, zucchini, and eggplant and place in a large skillet with olive oil, salt, and pepper and cook over medium heat until tender
  • Mix together flours, oil, vinegar, baking powder, milk, basil, oregano, parsley, thyme, and salt to form a dough
  • Separate dough into three balls and flatten into disks on the parchment paper and bake for 12 minutes
  • Mix together tahini, lemon juice, garlic powder, salt, and water
  • Top flatbreads with veggies and cover with tahini
