Baba Ganoush Na’anwich
Serves 3 – 340 Calories Per Serving – 15g fat/42g carbs/11g protein
Ingredients
- 1 Eggplant
- 2 Tsp Olive Oil
- 1 Shallot
- 1/2 Red Bell Pepper
- 1 Zucchini
- 1/2 Tsp Pepper
- 1/4 Cup Tahini
- 1 Lemon
- 1 Tsp Garlic Powder
- 2 T Water
- 1 Cup Chickpea Flour
- 1 Cup Tapioca Flour
- 1 T Olive Oil
- 2 Tsp Apple Cider Vinegar
- 1 Tsp Baking Powder
- 1/2 Cup Unsweetened Almond Milk
- 1 Tsp Basil
- 1 Tsp Oregano
- 1 Tsp Parsley
- 1 Tsp Thyme
- Sea Salt as Needed
Instructions
- Pre-heat oven to 400 and place parchment paper on baking sheet
- Dice shallot, red pepper, zucchini, and eggplant and place in a large skillet with olive oil, salt, and pepper and cook over medium heat until tender
- Mix together flours, oil, vinegar, baking powder, milk, basil, oregano, parsley, thyme, and salt to form a dough
- Separate dough into three balls and flatten into disks on the parchment paper and bake for 12 minutes
- Mix together tahini, lemon juice, garlic powder, salt, and water
- Top flatbreads with veggies and cover with tahini
