Moroccan Spice Chickpea Soup
Serves 3 – 230 Calories Per Serving – 6g fat/35g carbs/10g protein
Ingredients
- 1 T Olive Oil
- 1 Sweet Onion
- 1 Can Chickpeas
- 1 Can Diced Tomatoes
- 4 Cups Vegetable Broth
- 1 Tsp Garlic Powder
- 1 Tsp Turmeric
- 1 Tsp Paprika
- 1 Tsp Cayenne Pepper
- 1 Tsp Cumin
- 1 Bunch Kale
- Sea Salt as Needed
Instructions
- In a large pot, heat olive oil over medium heat
- Dice onions and add to pot with chickpeas, cooking until tender
- Add in tomatoes, broth, and seasonings and let simmer for five minutes
- Dice kale and add to pot, cooking for another five minutes
